We slice every durian stem to verify its heartbeat - ensuring the interior is pale green, fresh, and visibly wet. This is the ultimate proof that the fruit fell naturally within the last 24 hours, capturing the peak of its creamy richness. If a stem is dry, shrivelled, or brown, it is immediately rejected. We handle this ruthless gatekeeping religiously so that when you hand over our luxury box, you can do so with ultimate pride.

Pale, watery or weak-looking flesh does not deliver the intensity we want for our mooncakes. We select durian that looks as full-bodied as it tastes.

We inspect our durians to ensure a naturally oval to pear shape outlook. A balanced exterior is the first outward sign of top-tier health and high meat yield inside. Apart from cosmetic perfection, we assess the fruit as a whole. We look for a sound, intact husk with no obvious signs of sogginess, severe damage or deterioration. We also focus on the harvest maturity of the fruit as it affects pulp colour, firmness, dry matter, taste and texture.

We only use durian that has had enough time to develop its full character before it becomes part of our filling.

For our snowskin mooncakes, we use Black Gold Mao Shan Wang, a highly sought-after expression of the D197 cultivar selected for its deep colour, intense aroma and bold character. We only use 100% Mao Shan Wang durian flesh, chosen for its bold aroma, creamy texture and unmistakable bittersweet finish.

We reject durian that tastes flat, weak or one-dimensional.
